We are so excited to premiere our new cooking series, Diced. This series is hosted by our very own Ben Abben! In this episode learn how to make incredible Pico De Gallo and amazing homemade chips!

 

Recipe

Pico De Gallo

  • 7 tomatoes (Roma)

  • 1 red onion (diced)

  • 1 jalapeño (fine dice)

  • 1/2 bunch of cilantro (washed & chopped)

  • Juice of 1-1/2 limes

  • Tablespoon of salt & cumin

  • Teaspoon of pepper

  • 1 clove garlic (fine dice)

  • 2 tablespoons of olive oil

Fresh Chips 

  • Corn tortillas 

  • Oil - sunflower or vegetable 350-375 degrees 

  • Salt. Cumin & other spices optional 

  • Lime juice optional

POT ROAST

EP. 5

In this episode, learn how to make a delicious Pot Roast that is perfect for any occasion!

RECIPE

Meat Marinade

2 teaspoons Sambal (chili paste)

Fresh Ground Pepper

2 Table spoons Garlic powder or Granulated Garlic

1/2 Cup Olive Oil Sea Salt-use salt right before you put meat in the pan to sear

POT ROAST

(small batch 2 people)

1 lb tri tip or rump roast

1 yellow onion

7 cloves garlic (rough chop)

1 box beef broth

1/2 to 1 cup red wine

3 carrots

7-10 Yukon gold potatoes


 

NACHOS

EP. 6

We are keeping it simple this week with Nachos! Learn how to elevate this easy recipe with home made chips and pico de gallo from Episode 1 and top it off with meat from your pot roast!

RECIPE

Fresh Chips ( Ep 1 )

2 cups shredded cheese

Bake in oven at 370 or broil on high ( Keep an eye on it)

HOMEMADE PASTA

EP. 7 - pt 1

Learn how to easily make delicious homemade pasta from special guest home cook Anthony Cusenza.

RECIPE

2cups all-purpose flour (spooned in/not packed)

3 eggs

1 tsp salt

1 Tbs olive oil

Put the flour and salt in the food processor. Pulse a few times to mix the salt with the flour. Add eggs and olive oil. Let the food processor go about 20 seconds. If the dough balls up, that's ok it means it's a little wet. Knead the dough for a few minutes until it's soft. If it's dry and crumbly, that's also ok. In this case, wet your hands before kneading the dough, and it will come together. After kneading for a few minutes, cover with plastic wrap and let sit at room temp for at least 30 minutes. After the dough has set, you're ready to prepare it in a number of ways, either using a rolling pin and then cutting the pasta by hand, or using a machine like a pasta rolling machine or a Kitchen-Aid.


 

HOMEMADE SAUCE

White wine & butter pasta sauce

RECIPE

1/4 stick butter

10 cherry tomatoes (cut in half)

2 teaspoons garlic purée

Small shallot (thin sliced)

1/2 cup white wine

5 leaf basil (chiffonade cut)

Salt & pepper to taste
